Ingredients

For the Marinade:

  • 2 lbs chicken thighs or drumsticks (bone-in, skin-on preferred)
  • 1/2 cup soy sauce
  • 1/2 cup cane vinegar (or white vinegar)
  • 6 cloves garlic, minced
  • 1 bay leaf
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp sugar (optional)

For Frying:

  • 1 cup cornstarch or potato starch
  • Oil for deep frying

Garnish & Serving:

  • Steamed jasmine or garlic rice
  • Chopped green onions
  • Lemon wedges

Step 1: Marinate the Chicken

Let the flavors soak in for maximum impact.

  • Place chicken pieces in a large bowl or resealable plastic bag.
  • Add soy sauce, vinegar, minced garlic, bay leaf, pepper, and sugar.
  • Mix thoroughly and marinate for at least 4 hours or overnight in the refrigerator.

Step 2: Simmer the Chicken (Adobo Base)

Cook it gently before the final fry.

  • Transfer the chicken and marinade into a deep pan.
  • Simmer on medium heat for 25–30 minutes, turning the chicken halfway through.
  • Remove chicken and let cool. Pat dry with paper towels.

Step 3: Coat the Chicken

Get that crispy texture ready.

  • Lightly coat each piece with cornstarch or potato starch.
  • Press down gently so the starch sticks evenly.

Step 4: Fry to Perfection

Double-frying = Extra Crunch

  • Heat oil to 350°F (175°C).
  • Fry the chicken in batches for 5–6 minutes until golden brown.
  • Remove, let rest for 5 minutes, then double-fry for another 2–3 minutes.

Step 5: Garnish and Serve

Time to plate up!

  • Serve your crispy adobo chicken over hot rice.
  • Top with green onions and lemon wedges.
  • Optional: drizzle a bit of reserved adobo sauce over the rice.
